You may follow me on instagram and you may have noticed last week I had a serious zucchini baking day. Or “days” I should say. This zucchini plant growing in my garden is going crazy. The struggle is real, and I’m trying to find new recipes to make.

However, my mind drew a blank last week. Fortunately for me, I have lots of amazing, talented foodie friends. So, today, I took a shot at making my friend Audra’s recipe for Zucchini Brownies. And can I tell you guys…these were the bomb. They were rich and fudgy just how a brownie should be, no hint of veggie, I promise. And the frosting on top? I couldn’t have asked for anything better, it was absolutely perfect! The only change I made with these brownies was to sub out some of the regular sugar for brown sugar (and I used canola oil in place of the coconut oil). I think it gave the brownies a nice chewier texture!

Next year we’re planning on expanding our garden, but I think I will stick with ONE zucchini plant again, because clearly it loves this spot. Although next year, it will probably die from some horrible plant eating bug and I’ll have zero zucchini. More reason to enjoy them now!!

Chocolate Zucchini Brownies

Yield: 24 brownies

Prep Time: 15 minutes

Cook Time: 25 minutes

Ingredients:

For the Brownies:

  • 1/2 cup canola oil
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 tsp vanilla extract
  • 2 cup all purpose flour
  • 1/2 cup dark chocolate unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 1 tsp kosher salt
  • 2 cup finely shredded zucchini

For the Frosting:

  • 1/4 cup unsalted butter, melted
  • 5 Tbsp dark chocolate unsweetened cocoa powder
  • 2 cup powdered sugar
  • 6 Tbsp heavy whipping cream
  • 1/2 tsp vanilla extract

Directions:

  1. Preheat oven to 350 degree F. Line a 13x9 baking dish with parchment paper. Set aside.
  2. For the brownies, in a large bowl, combine oil, sugars, and vanilla extract. Add in flour, cocoa powder, baking soda and salt. Stir together until well blended. The batter will be very dry, it's okay!! Fold in shredded zucchini. Depending on the moisture of your zucchini, your batter may still be slightly dry. It's okay still. It may be moist, that's cool too! Either way, pour the batter into the prepared baking dish.
  3. Bake for 25-30 minutes until cooked. Remove and cool completely before frosting.
  4. For the frosting, combine the melted butter with cocoa powder in a small bowl with a whisk. Add in powdered sugar, heavy cream and vanilla. Whisk until smooth. Spread over cooled brownies. Cut into bars and enjoy!!

    If your mind drew a blank, that is definitely rare. I remember you telling me that the baking ideas are always flowing forth!
    But hey, the baker’s block produced these brownies, so that’s amazing. They look so good!

  8. I for one am not tired of zucchini recipes, probably because I have a ridiculous amount of them coming out of my garden daily! The brownies are a must make, although I’m pretty sure that frosting would be eaten before it made it on top of the brownies!

I could never get sick of delicious zucchini recipes and these brownies certainly look like da bomb!  Love how fudgey and chocolately they are!  Plus I adore your substitution of brown sugar (<–YESS!)!  And that frosting?  I could eat that with a spoon!  These are a scrumptious way to use up all that extra zucchini!  LOVE IT!  Cheers!

Mine is doing this year what you predict yours might next year.  Death by some horrible plant eating bug. Both plants actually. Guess it’s time for a trip to the Farmer’s Market so this black thumb can make these amazing brownies….

  15. These look way fudgier than any zucchini brownies I’ve had before! I actually haven’t gotten any zucchini to bake with this year and it feels wrong – normally family and friends are dumping piles on us!

  16. My mind is drawing a blank this week with back-to-school and coming back from vacation.  Isn’t it nice to just make a great recipe and not stress about being creative?  These look so delicious, and I love the idea of making brownies with zucchini! 🙂

Just took these out of the oven, they smelled soooo good I had to eat one, and I was not disappointed!  Moist, fudgey and perfect.  Love that I could put 2 cups of zucchini in them.  I added a cup of pecans, I need nuts in my brownies.  Thanks for the great recipe, it is a keeper. Now if I can just leave them to cool for the frosting………..

  19. Have you ever dozen diced zucchini for your zucchini apple crisp ?just put 3 at bags of it in the freezer . I like your recipe foe apple crisp that I am going to make today, an tomorrow the brownies.

    OMG this looked so good I had to try it and let me tell you, I am not disappointed at all! At first I was really worried because the batter was nothing but dry flour clumps, but once the zucchini was added, WOW! It smelled so nice when it was baking too. Brought some for the girls at work and got nothing but compliments and they couldn’t believe how moist it was and that you couldn’t taste the zucchini at all. If I had to rate this it would get 5/5 for taste, 5/5 for texture and 5/5 for easy.
    **it’s more cake like then brownie but absolutely delicious**
