Top Tip: Press the candy eyeballs into the warm brownies immediately after baking.

Storage: Keep brookies in an airtight container at room temperature for up to one week. Or freeze for up to three months.

Ingredient Notes

Brookies are the pinterest phenomenon that combine chewy chocolate chip cookies with fudgy brownies.

  • Brownie Mix- I used Ghirardelli brownie mix that makes brownies in a 9-inch square baking dish.
  • Chocolate Chip Cookie Dough- You’ll need about a pound of cookie dough, whether you buy it in a tube, tub, or flat package like in the photo above.

Here’s what else I used to turn plain Brookies into Spooky ones:

  • Halloween Oreos – The orange filling adds a nice pop of color to the center of the bar. Sub regular Oreos if you don’t care about the color.
  • Chocolate Morsels – Extra chocolate chips added on top of the brookies are optional but I can’t resist the opportunity for MORE chocolate!
  • Candy eyes – These make the bars adorably spooky. You can find them online or at some craft stores. They’re fun to have on hand to turn any cookie or cupcake into an instant Halloween treat.

How to Make Halloween Brookies

Make the brownie batter. Mix the ingredients for the brownies together in a bowl and pour into a brownie pan. If you’re making the cookie dough from scratch, prepare it according to recipe directions.

Oreo layer. Place 16 Oreos across the top of the brownie layer, spacing them evenly.

Cookie layer. Top the Oreo cookie and brownie layers with big spoonfuls of the cookie dough. Continue until all the cookie dough is used. You’ll be able to see some of the brownie batter peeking through.

Bake. Top the cookie layer with the extra chocolate chips. Bake for 34 to 40 minutes. Press the candy eyes onto the top of the cookies over melted chocolate chips. Let the bars cool in the pan, then cover and refrigerate for 2 hours before slicing into bars.

Spooky Halloween Brookies Recipe

These Spooky Halloween Brookies have a rich, fudgy layer of brownies topped with Halloween Oreos and chocolate chip cookie dough. Candy eyes add the perfect touch of spookiness to these festive brownie bars!

Ingredients 

For the brownie layer:

  • 1 box Ghirardelli Chocolate Supreme Brownie Mix 18.75 ounce (makes an 9-inch pan)
  • ¼ cup water
  • cup vegetable oil
  • 1 large egg

For the cookie layer:

  • 16 Halloween Oreos
  • 1 package Nestle Chocolate Chip Cookie Dough 16.5 ounce (in the refrigerated tube)
  • ½ cup Ghirardelli milk chocolate morsels
  • 32 candy “eyes”

Instructions 

  • Preheat oven to 325 degrees F. Line a 9-inch square baking dish with parchment paper. Set aside.
  • Mix ingredients for brownies in a large bowl using a whisk. Mix until just combined. Pour into bottom of baking dish, spreading so batter goes all the way to the sides.
  • Top with 16 Oreo cookies.
  • Breaking the chocolate chip cookie dough into chunks, drop by tablespoons onto the brownie/Oreo layer. Continue until all cookie dough is used, and brownies are nearly covered.
  • Top with extra milk chocolate morsels (optional).
  • Bake for 35-40 minutes. Press “eyes” onto melted chocolate chips. Allow brookies to cool at room temperature. Once cooled, cover with foil and refrigerate for 2 hours (or overnight). Cut into 16 bars. ENJOY.

Notes

  • The brownie mix I used was for a 9-inch pan. Different brands have different boxes for different sized pans, so you can totally make this in a larger pan if you adjust your box mix accordingly! If you do use a bigger pan with more brownie mix, you’ll need extra cookie dough and more Oreos to cover the whole thing!
  • Store brookies in an airtight container at room temperature for up to one week. Or freeze for up to 3 months.

I was a swimmer in high school and gosh those swim meets they last for ages, during waterpolo season I worked the snack bar with the moms and away games I went to the games with all the moms I was the honorary mom! LOL And one of the moms ALWAYS made the ghiradhelli brownies, and they are just SOOO Good, so I can only imagine with cookie and oreos?! Wowza I need!
