Chocolate Oatmeal Cream Pie

These are amazing. You all may remember that I made oatmeal cream pies back in March. They tasted just like Little Debbie’s version. That Little Debbie makes a lot of treats that my children enjoy. However, I don’t think she ever turned one of her cream pies into chocolate. These were so good. The kids and their friends had them all eaten in ONE day. I know, they lack discipline. And self control. I have no idea where they get it from. Must be their father.

Chocolate Oatmeal Cream Pie

Ingredients
    For the Cookie:
    • 1 cup margarine (NOT butter) or Crisco butter flavored shortening
    • ¾ cup brown sugar
    • ½ cup granulated sugar
    • 1 Tbsp molasses
    • 1 tsp vanilla extract
    • 2 eggs
    • 1½ cup flour
    • ½ tsp salt
    • 1 tsp baking soda
    • ¼ tsp cinnamon
    • 3 Tbsp unsweetened cocoa powder
    • 1½ cup quick oats
    For the Filling:
    • 2 tsp very hot water
    • ¼ tsp salt
    • 1½ (7oz) jars of Marshmallow Fluff
    • ¾ cup butter flavor Crisco
    • ⅔ cup powdered sugar
    • 1 tsp vanilla
    Instructions
    In large bowl, beat margarine, brown sugar, granulated sugar, molasses, vanilla and eggs. Add flour, salt, baking soda, cocoa and cinnamon. Mix in the oats. Drop by ONE tablespoon onto a parchment lined cookie sheet. Bake 8-10 minutes in a 350 degree oven, until just starting to brown around the edges. DON’T OVERCOOK!
    After cookies have cooled, combine hot water with salt and mix until salt is dissolved. In large bowl, beat marshmallow fluff with Crisco, powdered sugar and vanilla. Beat on high until fluffy. Add in salt water and mix until well combined. Spread filling on one cookie and press second cookie on top. Enjoy!

    Seriously? Chocolate oatmeal creme pies??? Ok girl you are genius! This sounds absolutely divine to me:-) I might not have self control if I make some of those!

    I didn’t have a choice in self control, my kids and all their friends took care of eating these. I had one. Imagine that!

    I used to love those oatmeal creme pies! They were the only oatmeal type cookies that I would ever eat when I was a kid. I love how you made them chocolate, yum! :)

    Yum. I am going to make these. I LOVED the Little Debbie version, but after I started to really read labels, I was a little freaked by all of her ingredients. These look perfect.

    Ooooooh baby, these look so yummy. Reminds me of a childhood treat I haven’t had in ages, and something my man would surely love. Might as well make these and THEN re-start my get fit for summer plans :)

    Your suggested recipes are very useful to getting idea about it. Chocolate biscuits are looks very yummy and superb with chocolates flavour. Very delicious photographs.

    This looks delicious! I cannot eat Little Debbie, it is too sweet for me but I have a feeling that making my own will be a lot better.

    Good question! I guess it depends on if I’m in a chocolate mood or not! I think my kids really like them more in the original version, but it’s a nice treat to change it up every now and again!
