Red Pepper Hummus

We are having a great visit right now with Jaymie and Nik! He is such a cutie, and his cousins adore him (I think he kinda likes them too)!

Anyways, having company always leads to me to cooking something. Jaymie loves hummus so I made a quick batch of this super easy, absolutely delicious Roasted Red Pepper Hummus (it’s got a nice kick to it too)! Enjoy!

Red Pepper Hummus

  • 15 oz can garbanzo beans, drained
  • 4 oz jar roasted red peppers
  • 3 Tbsp lemon juice
  • 3 cloves garlic, pressed
  • 2 Tbsp tahini
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 Tbsp chopped fresh parsley

  1. In food processor, puree the beans, red peppers, tahini, lemon juice and seasonings. Process until smooth and slightly fluffy. Refrigerate at least one hour before serving, sprinkle with parsley.

  1. Humus with red peppers is my favorite. Your recipe is really similar to mine except for parsley and cumin. I will try that next time in mine. Great ideas and recipe! Check out my blog sometime I love following you on blogger.
