Plus, who doesn’t love all the apple cider treats many orchards have to sell…donuts, slushies, fritters!

Today’s recipe is going to make your mouth water! Today’s recipe for Cinnamon Apple Coffee Cake came from this Fleischmann’s®  Yeast Recipe. The brown sugar streusel and a cinnamon glaze adds that delicious cinnamon rolls flavor.  It’s the perfect dish to share for any fall-time brunch or get-together and if you bake a little extra, you can send guests home happy with any leftovers!

The dough for this recipe was made with Fleischmann’s® RapidRise™Yeast. Don’t be skeerrrrd!!! I know some of you see a recipe that calls for yeast and you immediately get afraid. I promise, if you follow the easy steps in the recipe, you can do this.

And the result? An amazing cake with the texture of a cinnamon roll!! And I’ve also cut out a step from the original recipe making it even easier. So what are you waiting for?

This recipe has me thinking though…if the dough is more like a cinnamon roll than cake, that means I can eat some for breakfast, right??

For those of you wanting some step-by-step details on making this cake a success…here you go!

  1. Gather all your ingredients for the cake ahead of time! I do this with all my baking. It not only makes things go along quicker, but you’re less likely to leave something out accidentally if you have everything out ahead of time.
  2. Make the cake batter. Or dough. However you want to label it, you’re going to follow the directions in the recipe below to make this sticky dough. I added a little flour on top to help press it into the pan. The texture resembles that of a cinnamon roll or homemade bread, stretchy and pliable!
  3. Melt your butter, sugar and cinnamon in a small skillet until bubbly. The original recipe calls for adding your apple slices, to cook them down until soft. But I skipped that step. Baking the apples with the cake softened them completely!
  4. Lay your apple slices on top of the dough. You can keep the skin on (so pretty!). Just make sure you slice them nice and thin so they do bake soft. Once arranged, pour your butter mixture over the apples.
  5. Combine your streusel topping and sprinkle generously over the apples. Bake accordingly and allow to cool before adding the glaze! ENJOY.

Cinnamon Apple Coffee Cake

Yield: 13x9 coffee cake (16 slices)

Prep Time: 1 hour (rise time), 30 minutes (prep)

Cook Time: 25-30 minutes

Ingredients:

For the dough:

  • 2 1/4 cups all-purpose flour, divided
  • 1/3 cup granulated sugar
  • 1 envelope Fleischmann's® RapidRise™ Yeast
  • 1 tsp kosher salt
  • 1/2 cup water
  • 1/4 cup milk (I use skim)
  • 1/3 cup unsalted butter
  • 1 large egg

For the apple layer:

  • 1/3 cup unsalted butter
  • 2 Tbsp granulated sugar
  • 1 tsp Spice Islands® Ground Saigon Cinnamon
  • 3 cups thinly sliced apples (cored, skin on)

For the streusel:

  • 2 Tbsp unsalted butter, softened
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tsp Spice Islands® Ground Saigon Cinnamon

For the glaze:

  • 1 cup powdered sugar
  • 1/3 cup heavy whipping cream
  • 1 tsp Spice Islands® Ground Saigon Cinnamon
 

Directions:

  1. Grease a 13x9 baking dish with baking spray. Set aside.
  2. In a large mixing bowl, combine 3/4 cup of the flour, sugar, undissolved yeast and salt.
  3. In a small saucepan, combine water, milk and butter over medium heat until very warm (about 120F). Add to flour mixture. Beat 2 minutes at medium speed of an electric mixer, scraping down sides of the bowl if needed.
  4. Add egg and 1 more cup of the flour. Beat an additional 2 minutes on high speed. Add in remaining 1/2 cup of flour and beat until a stiff batter forms. Turn into prepared baking dish. Sprinkle with about 1 Tbsp of flour and press gently with fingertips until spread evenly in pan.
  5. Arrange sliced apples over dough. In a small skillet, melt butter, sugar and cinnamon for the apple layer. Heat until bubbly and immediately pour over apples.
  6. In a small bowl, combine streusel ingredients until crumbly. Sprinkle over apples. Cover pan with a clean, dry towel and let rise in a warm, draft-free place for about an hour. Dough should double in size.
  7. Uncover and bake in a 375 degree F oven for about 25-30 minutes. Cool on wire rack before adding glaze.
  8. For the glaze, whisk together the sugar, cream and cinnamon until smooth. Drizzle over cooled cake. Slice and enjoy!

    Oh man, do I love coffee cake. I remember downing the Entenmann’s ones as a kid, back when I didn’t appreciate my metabolism. 
    This looks like the epitome of the best breakfast! I mean, it’s cinnamon roll-esque with happy toppings. How could it go wrong?
