Why Make S’mores Cheesecakes

Baking cheesecake is something I love to do. Today’s recipe is perfect when you’re looking for that delicious S’mores flavor.

The chocolate ganache was gives that melty-gooey chocolate texture just like when eating a s’more!

Of course, I put an extra piece of Hershey’s chocolate on top. You know. For garnish purposes.

If you’re looking for a treat to bring to your next potluck, these cheesecakes are the answer! Made with muffin liners, S’mores Cheesecakes come out of the oven ready to serve and share.

Ingredient Notes

Ingredients needed to make mini s'more cheesecakes.
  • Cocoa powder – Use unsweetened dark chocolate cocoa powder for best flavor!
  • Milk chocolate morsels – You can swap the milk chocolate for semi-sweet, however the milk gives it a more authentic s’mores flavor.
  • Marshmallow fluffSometimes called “marshmallow cream”, you’ll use this in the light and fluffy frosting.
  • Chocolate bars – I like Hershey’s bars, both for tradition’s sake and because it’s easy to break them into squares for garnishing the S’mores cheesecakes. You’ll want to buy extra for our smores cookie bars!
  • Graham crackers – Or you can buy ready made graham cracker crumbs to make the crusts. Oreo crust would be amazing too.

How to Make Mini S’mores Cheesecakes

Make the graham cracker crust

Pulse the graham crackers in a food processor to make crumbs, then add in the sugar and melted butter. Put a spoonful of crust into the bottom of each muffin cup and press with the bottom of a glass or a tart shaper.

Make cheesecake filling

Beat cream cheese with sugar and vanilla, then add eggs and cocoa powder and mix well. Scoop filling into the muffin liners and bake for 25 to 30 minutes. Let them cool on a wire rack while you make the chocolate ganache and frosting.

Assemble

Top each cheesecake with ganache frosting and marshmallow frosting. Garnish with a Hershey’s chocolate square and enjoy!

Ingredients 

FOR THE CRUST:

  • 9 honey graham crackers whole
  • 2 Tablespoons granulated sugar
  • 6 Tablespoons unsalted butter melted

FOR THE CHEESECAKE:

  • 2 packages cream cheese, softened 8 ounce each
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 Tablespoons dark chocolate unsweetened cocoa powder

FOR THE GANACHE:

  • 2 cups milk chocolate morsels
  • ½ cup heavy cream

FOR THE FROSTING:

  • ¼ cup unsalted butter softened
  • 1 cup marshmallow cream Fluff
  • 2 ½ cups powdered sugar
  • 2 Tablespoons milk
  • 2 chocolate bars 1.55 ounce each, Hersheys

Instructions 

  • In a food processor, pulse graham crackers until fine crumbs. Pulse in sugar. Using a fork, mix in the melted butter. Spoon about 1 tablespoon of crust into the bottom of 20-24 paper lined muffin cups. Press into bottom of paper liner using a tart shaper or bottom of a cup. Set aside.
  • In a large mixing bowl, beat cream cheese, sugar and vanilla on high for about 2 minutes. Add eggs, one at a time, beating until fully incorporated. Beat in the cocoa powder. Spoon filling (about 2 Tbsp scoop) into muffin cups until 2/3 full. Bake cheesecakes in a 350 degree F oven for 25-30 minutes. Remove and cool on a wire rack.
  • When cooled, begin ganache and frosting. In a glass bowl, add heavy cream and microwave one minute, until warmed. Add chocolate, heat an additional 60 seconds. Whisk smooth.
  • Spoon about 1-2 Tbsp of ganache over each cooled cheesecake.
  • For the frosting, beat butter for 2 minutes, until pale in color. Beat in a marshmallow, sugar and milk for an additional 3-4 minutes, until fluffy. Pipe onto top of cheesecakes (above the ganache. Top each dessert with a piece of chocolate bar. Refrigerate for at least two hours for best flavor.
  • Store in refrigerator for 3 days. ENJOY.
